Low-Fat Lasagna Recipe

Ingredients
10ozlasagna noodles, cooked
1/2poundbeef, ground, extra lean, ground turkey may be used
8ozmushrooms, can, pieces, drained
1eachonion, chopped
30ozspagetti sauce, low-fat
2eachcarrots, peeled, shredded
16ozcottage cheese, fat-free
8ozmozzarella cheese, part skim, shredded

Directions:

Cook lasagna noodles; drain and set aside. In skillet or fry pan, cook meat; drain fat and place meat in colander. Rinse with hot water. Add mushrooms and onion to cooked meat.

In a 9x13x2 inch baking pan, layer one-third of cooked lasagna noodles with half the meat mixture, half cottage cheese, half carrots, half mozzarella and one third sauce. Repeat layers. Top with remaining noodles and sauce. Cook uncovered for 35 minutes at 350 degrees. Remove from oven; cover with foil. Let stand 20 minutes before serving.

Marinated Mushrooms #2

1 lb Fresh mushrooms

1/4 c Soy sauce

1/2 c Red wine vinegar

6 tb Sherry

4 tb Sugar

1 c Finely minced onions

Mix all ingredients but the mushrooms in a saucepan and bring to a boil. Pour over mushrooms that have been cleaned and halved or quartered depending on size. Marinate and chill fo 24 hours before serving. Small button mushrooms can be used whole.
